Sugar Free Lemon Butter Cookies

Don’t ask me why, but I got an inexplicable hankering for lemon cookies. So …  I decided to take a stab at making them. These cookies have a nice, light texture and “just enough” lemon flavor … not too sweet either. I think they’d make a wonderful cookie to have with a cup of tea at night after dinner.

They really hit the spot!

Ingredients:

1/2 cup butter, softened
1/3 cup Swerve (or sugar substitute of your choosing)
2 teaspoons lemon extract
1 teaspoon vanilla
1 teaspoon lemon zest, from 1 small lemon (I used dried lemon zest)
1 egg
1 cup blanched almond flour
1/3 cup unflavored whey protein powder (I use Jay Robb brand)
1 teaspoon baking powder

Directions:

  1. Preheat your oven to 350 degrees.
  2. Put all the ingredients in a medium bowl and beat with an electric mixer until creamy. This will only take about a minute or two.
  3. Using your hands take a small chunk of dough out of the bowl and roll it into a ball. Place the 6 balls across and 4 balls down on the sheet. Gently pat down each ball until it’s  about 1/4-inch thick.
  4. bake the cookies for about 8-12 minutes or until golden brown on the edges. Cool on a wire rack.
  5. Enjoy!
