Bok choy or Chinese cabbage can refer to two distinct varieties of Chinese leaf vegetables often used in Chinese cuisine. Bok Choy has a mild flavor that tastes great in soup, sautéed, or eaten raw in a salad. This recipe is a wonderful and simple way to eat your greens…the bok choy is tender and sweet from the soy sauce.

3 tablespoons extra virgin olive oil
4 heads bok choy, quartered lengthwise
2 tablespoons soy sauce
¼ teaspoon white pepper

  1. Place a medium sauté pan over medium-high heat. When hot, add the olive oil, then the bok choy. Sauté for about 6 minutes, until wilted and tender.
  2. Add the soy sauce and white pepper. Stir to combine.
  3. Serve immediately and enjoy!
