Low Carb Buffalo Chicken Dip

I had to upload this recipe for you! We were at a Football pre-season game party last weekend and my friend Liz served this delicious dip. OMG, it’s soooo delicious and low glycemic! Just make sure that you use fresh vegetables for dipping (I recommend celery) – no bread or crackers…


1 (8 ounce) package cream cheese, softened
1/2 cup blue cheese salad dressing
1/2 cup hot sauce of your choice
1/2 cup crumbled blue cheese or shredded mozzarella cheese
1 large poached chicken breast, shredded
Assorted fresh vegetables


  1. Heat the oven to 350 degrees F.
  2. Spread the cream cheese in a 9-inch deep-dish pie plate with a fork or whisk until it’s smooth. Stir in the blue cheese dressing, hot sauce and blue cheese and shredded chicken. Sprinkle crumbled cheese on top.
  3. Bake for 20 minutes or until the chicken mixture is hot and bubbly. Stir before serving. Serve with the vegetables for dipping.
  • Tip: This dip can be kept warm in a small crockpot or fondue pot on the buffet table.
