Low Carb Corned Beef Hash

Corned Beef Hash goes great with eggs for breakfast. Yummy! It’s traditionally made with potatoes, which is a starch and converts to sugar in the body … so I simply swapped out the potatoes and put in turnips to transform it into a low glycemic and lower carb recipe.

Easy Peasy!

Ingredients:

pound corned beef brisket, cooked & cubed
cups turnips, cooked & cubed (I buy them cubed in the freezer section of my supermarket – easier)


Directions:

  1. Toss beef and turnips together in a bowl. Add onion and heavy cream and stir to combine.
  2. Heat oil in a heavy nonstick skillet over medium-low heat 1 minute. Add beef-turnips mixture and cook until a crust forms, about 10 minutes.
  3. Turn hash and brown other side, about 10 minutes more.
  4. Serve with a poached egg, if desired.
