Low Carb Cheesy Artichoke Dip

I went to a backyard party last weekend and my friend Kim brought this delicious, low carb dip as an appetizer. There was crudites on the table, so I dug in and had some. It’s really delish and super-simple to make.

This recipe contains a lot of dairy and fat, so eat it in moderation and on occasion. Thanks Kim!

Ingredients:

1 -2 cans artichoke quarters and hearts, liquid drained and roughly chopped
8 oz. white cheddar cheese, shredded
1 cup Parmesan cheese
1 cup mayonnaise

Directions:

  1. Mix ingredients together and bake in a lightly greased dish at 350 degrees (stir occasionally) until bubbly, approximately 20 minutes.
  2. Serve with cut up vegetables.
