Cheese Crisps

I love these little cheese crisps crackers! I use them as a quick snack when I need a little nibble BUT hands down my favorite way to enjoy them is ..drum-roll please…. to break them up and use them as croutons in my salads! Oh, how I love me some CRUNCH! They are spectacular accompanied by a glass of red wine (but only as a special treat!) My son loves to eat them too, I constantly have to slap his little fingers out of my stash…don’t mess with me and my food!


1 cup grated or shredded hard cheese (always use high quality cheese)
assorted herbs and spices (optional)
TIP – Cheese: You can use most types, but the results will be different. I use hard cheeses, such as Parmesan, Romano, Asagio, Cheddar, etc. I do not recommend using mozzarella for this recipe.


  1. Preheat oven to 350 F.
  2. Toss cheese with any seasonings you’d like — garlic powder (about half a teaspoon for a cup of cheese), hot pepper powder, even cinnamon. Or leave plain.
  3. Put 1 to 4 Tablespoons of cheese (depending on the size you want) on a baking sheet covered with parchment paper. Flatten the tops so they are in more or less an even pile. There should be at least two inches between mounds.
  4. Bake 5 to 6 minutes until they are melted and a light golden brown (they will be a little darker at the edges). It happens fast, so watch the oven carefully.
