My family and I took a lovely 9-day cruise to the Caribbean during winter break 2013 and every morning of our vacation I had a Carrot Celery Juice. Two simple ingredients that together taste so delicious, naturally sweet + is full of vitamins and minerals!
I looked around online and found lots of Carrot Celery Juice recipes that included an apple … you do not need the apple. This juice is sweet enough without it, and excessive fruit consumption is something I do not recommend due to the natural high sugar content. I rarely, if ever juice fruit, I juice veggies. I eat fruit whole to slow its sugar impact on my body (fiber). One more thing to keep in mind, juiced carrots will impact your blood sugar, so drink this juice only on occasion and not every day.
Juicing is visual, so if you need more juice… add more of each vegetable to create more juice. Adding a nub of fresh ginger root would add some zing, so I put it as “optional” in the recipe.
I like to drink my juices or smoothies on an empty stomach (early morning before breakfast or a mid morning snack before lunch) to ensure that the nutrients go straight into my system without the holdup of complicated digestion!
4 large carrots, washed, topped, tailed and peeled
3 large celery stalks with leaves, washed
nub of fresh ginger root (optional)
- Put all the ingredients through your juicer and enjoy!
